Garlic is a true superfood, rich in nutrients. But did you know that eating garlic incorrectly can harm your health? Many people make mistakes that cause garlic to lose its beneficial properties or even become dangerous. In this video, we will tell you how to avoid the main mistakes with garlic and get the most out of this amazing product. How to make pickled garlic 1. Pour a mixture of apple cider vinegar, water, and salt over peeled garlic cloves. 2. Store in a sealed jar in the refrigerator for 1-2 weeks. 3. Use as a snack or addition to salads. How to make fermented (black) garlic at home What you need: 1. Whole garlic heads (with skin). 2. Slow cooker (multicooker, yogurt maker, or dehydrator with a keep-warm function). 3. Foil or cling film (optional). Instructions: 1. Choosing garlic: Use fresh, undamaged medium to large garlic. It’s best to have the cloves all the same size. 2. Prep: Trim the dry ends off the garlic heads, but leave the skins on. This will prevent them from drying out. 3. Wrap (optional): Wrap each head of garlic in foil or cling film to retain moisture. This step is optional, but it helps ensure a more even result. 4. Fermentation: Place the garlic heads in a slow cooker that can maintain a steady temperature of 130–140°F (55–60°C) (this is key!). If you have a slow cooker, set it to the “Keep Warm” setting (usually around 130°F). If you are using a dehydrator, set it to the same temperature. 5. Fermentation time: The process takes 2–3 weeks. During this time, the garlic will turn black, soft, and have a sweet, caramel-like flavor. It is important to maintain a steady temperature and humidity. 6. Test for doneness: After 2 weeks, test one head. The cloves should be black, soft, have a chewy texture, and a sweet aroma. If the garlic is not soft enough, leave it for a few more days. 7. Storage: Store cooked black garlic in an airtight container in the refrigerator for up to 3 months.
