Pour the yolk mixture into the hot milk. Bring to a boil while stirring constantly. Spread the cream with butter and cover with cling film. Let cool. Whip the cooled cream with butter, rum and ground coffee. Spread coffee cream on the cooled sheet, cut it in half lengthwise and roll both into small rolls. Cover and let cool.
