In the Shulgan-Tash nature reserve in the Bashkir Urals in Russia, the village of Gadel-Garejero lies in the middle of wooded hills covered with centuries-old oaks, birches, aspens, lindens and maple trees. There lives a special species of wild bee: the rare Bursyan honey bee. It is winter-hardy - a huge advantage given the climatic conditions here. The bees have to survive temperatures of up to minus 40 degrees Celsius in winter. This species of bee also has a second special ability: it has adapted to the short flowering period of the linden trees, which lasts only eight to ten days. During this time, the bees' workload increases to 150 percent. Sabit Gallin works as a ranger in the reserve and is one of the few honey hunters in the village, the so-called Bortewiks. They make and maintain Borten, the homes for wild bees. These are rectangular niches carved directly into the trunks of tall pine trees. Some of these artificial caves have been inhabited by bees for centuries. To get to the honey, Sabit climbs the pine using a climbing harness. He works very quietly and slowly so that the bees don't sting him. The honey hunter must not be too greedy, because without enough supplies the bees cannot survive the winter. After the harvest, it's time to process it: Sabit crushes the honeycombs, which contain honey, pollen and wax, and processes them into a pulp, which ultimately produces forest honey with a special taste - pure nature, without artificial flavors or additives.
