ROASTED MIXTURE EGGPLANTS AND BOILED CHICKEN???? ROASTED PISTACHIOS ON TOP (Roasted Eggplant Appetizer Recipe) Today I have prepared a recipe for roasted eggplant and chicken appetizer with yogurt for you. You should definitely try this appetizer recipe, which is both delicious and visually wonderful with the sauce on top. I can say it is more than an appetizer. First, let's start the appetizer by roasting the eggplants. We wash 3 large eggplants and put them on a baking tray covered with greaseproof paper. We make a few cuts on the eggplants with a knife. We cook them at 180 degrees until the eggplants soften. Then, put our pot on the stove and add drinking water. Let's put 3 chicken breasts in the pot, add a teaspoon of salt and boil the chicken. We also easily and practically shred the boiled chicken breasts with a fork. Our roasted eggplants are cooked. I will show you a very easy and practical method to remove the inside of the roasted eggplants. Let's wrap the eggplants in stretch film, leaving the cut part empty. We easily remove the inside of the eggplants as I showed. We have practically removed the inside of the roasted eggplants without making you hassle. We chop the roasted eggplants into small pieces with a knife. The eggplants are ready, we put them in a large mixing bowl. We add the chicken breasts to the eggplants. We add the other ingredients needed for our appetizer, 1 cup of boiled corn, 1 cup of boiled chickpeas, 1 teaspoon of salt, 1 teaspoon of black pepper, 2 tablespoons of mayonnaise, a large bowl of strained yogurt. We mix all the ingredients. We put the appetizer on a serving plate. Let's put a suitable pan on the stove for the sauce on top, add 3 tablespoons of olive oil. When the oil is heated, add half a cup of walnuts and half a cup of unshelled peanuts and fry. When the color of the walnuts and peanuts changes, add 2 teaspoons of sweet pepper powder and fry. Our sauce is ready, take it off the stove. Make a mark on the appetizer on the serving plate with a spoon and add the peanut-walnut sauce to these gaps.
