Transfer the potatoes to a baking dish and mash. Season the potatoes while they are still hot with olive oil, salt, black pepper, red onion, Dijon mustard, lemon zest and juice, parsley, red wine vinegar and mix well. Set aside. Preparation Method Roast Beef Heat the frying pan. Season the meat with salt, black pepper and olive oil. Place the seasoned meat in the frying pan and let it sear for about 3 minutes on each side. Remove the meat from the heat and coat in thyme. Let the meat rest for at least 5 minutes before cutting and season with fleur de sel. Preparation Method Assembly Place the mayonnaise salad on the serving plate. Make grooves throughout the salad and add olive oil.
