Juicy roast beef from the oven master Ingredients: Around 1.2 kg roast beef 3 - 4 onions ½ leek 2 large pieces of celeriac 4x2cm 2 carrots 1 tsp cornstarch 2 tbsp tomato paste 1 liter meat or vegetable stock (instant) 2 bay leaves juniper berries 1 - 1½ tsp hot mustard 250ml red wine Salt and pepper A little sunflower oil How it works! Rub the roast beef with hot mustard Add salt and pepper Leave to cool until the sauce is ready Here's how it works! Peel, clean and roughly chop the vegetables In a pan, fry two of the onions and the carrots with a little sunflower oil. When the onions start to brown, add the leek and celery and fry too. After around 10 minutes, add the tomato paste to the vegetables and fry for a while. When the vegetables have a good color and are sticking to the bottom, deglaze with 150ml red wine. Continue frying until roasted aromas develop again. Deglaze with red wine a second time. Let the vegetables settle on the bottom again, then pour in the meat stock. Add the bay leaf and juniper berries and stir in, bring to the boil once. Turn off the stove. This is how it continues! Put another onion and a roughly chopped garlic clove in the oven master. Using a ladle, add the vegetables from the sauce and some of the sauce to the oven master. Place the meat on the vegetables and top up with the sauce until the meat is ¾ covered. Into the oven! The oven is preheated to 230 - 240C. Bake the roast with the lid on for 30 - 40 minutes. Then reduce the temperature to 180 - 200C and finish cooking for a further 60 - 70 minutes. This is how it continues! Lift the roast out of the sauce and keep warm. Pass the sauce through a sieve into a suitable pan, season to taste and thicken with a little dissolved cornstarch. Cut the meat and serve with spaetzle, vegetables and lots of sauce Enjoy your meal!
