With the oil already hot, add the meat. Season the meat with salt and pepper to taste. Seal the meat well and add the beans and broth. Cover the casserole and boil over low heat for about 15 minutes. The beans will be a little creamier and drier than normal. Turn off the heat and set aside. Season the pork belly with salt and pepper to taste. Place a frying pan on the fire and let it heat up. Add the pork belly and let it seal on one side and the other. Add half a cup of water. Cover and cook until dry (be careful not to burn). When it is completely dry, remove it from the pan. Let it cool naturally until it is very dry. In another pan, add oil for deep frying. Place on the fire to heat and when the oil is very hot, add the pork belly. Fry until evenly browned and crispy. Remove from the oil and drain in an iron sieve to keep it dry and set aside. For the patacones: Peel and cut the bananas into thick slices (about 4 cm) In a frying pan add oil for deep frying and place on the heat to heat. With the oil already hot, add the bananas. Fry them until golden, without burning. Once the bananas are already golden, remove them from the oil and drain them in an iron sieve to keep them dry. Lower the oil heat, as we are going to fry the bananas again. In a bowl, place the salt. Peel and crush the garlic cloves with salt. Add water and mix lightly. Using something of your choice, press down on the fried banana slices and knead them carefully to make them thin. Soak the mashed bananas in water with salt and garlic. Drain well and very carefully add back to the hot oil. Be very careful not to splash the oil on yourself. Fry them again until they brown a little more. Remove from the oil and let it drain again in an iron sieve. Set aside: Fry the eggs.
