Rice Cakes, Puerto Rican Tradition From Corozal This rice cake is a typical artisan dish from my beautiful country Puerto Rico, but this one is specifically made in the town of Corozal, Puerto Rico. The cake is made very similar to how the masa or yuca cake is made. This with a different seasoning by each cake artisan, here I leave you my version. The rice grows inside the leaf and is pasted together with the grated green plantain, and the banana leaf gives it that delicious cake flavor. My recipe for Puerto Rican rice cakes in my Boricua style: Ingredients: 2 Cups of raw rice 1 1/2 very green plantain {grated} Salt {to taste} Dampened plantain leaves 3 pounds of Meat for the filling of your preference {Pork, chicken, turkey, beef} I used a small ham Method to prepare your meat: 1 small ham or 3 pounds of pork 1/4 Chopped onion 1/4 Chopped red and green peppers 4 Crushed garlic 2 tbsp Olives Mixed cilantro and recao 2 beef cubes 1 Cilantro and achiote seasoning 1 Tbsp achiote oil 1 tbsp dried oregano 1 tbsp cumin 1 tbsp garlic powder Cut the ham into very small pieces and chop it before adding the ingredients. Method of preparing the cakes: 1- Leave your rice in water for 2 hours or overnight 2- Drain the water and pour in 1 1/2 cups of the stewed cardoon 3- 1 1/2 grated banana and mix. 4- 1 tbsp achiote oil 5- Leave it covered until you make your cakes Procedure for the cakes. 1- Place the banana leaf, spread achiote oil on it before adding your rice and put a spoonful of rice on it, add a little with the same spoon. Place the stew on top of the rice. A spoonful of stew depends on the size of the cake. Fold the leaf towards you until the cake is sealed. 2- Fold the leaf with the cake paper very well so that it does not absorb water when it is boiled. Do not press too much, leave space since the rice is raw and will grow. 3- Remember the rice grows when it is cooked. 4-Bring to boil for 45 to 60 minutes. 5- Open the cord, paper and sheet and begin to enjoy this delicious delicacy. How to cook your cakes. 1- In a deep and large pot, bring water to a boil with salt to taste, and place your cakes and cover very well. 2- Cook over high heat until it begins to boil. 3- When it begins to boil, lower the heat to medium heat and cook for 60 minutes. {1 hour}. Tips: You can add some olives and chopped red peppers, if you wish. Add beef or chicken broth. Cook on medium high until the water evaporates and begins to form craters. Turn off the temperature.
