Rustic Potatoes with Aioli Yield: 1 serving Preparation time: 1 hour and 10 minutes Ingredients For the potatoes: 2 Monalisa potatoes 1 tablespoon of coarse salt Rosemary to taste 300 ml of neutral oil For the aioli: 1 head of garlic 1 egg Salt to taste 120 ml of olive oil Juice of ½ Sicilian lemon Preparation Potatoes: Preheat the oven to 180˚C. Wash and dry the potatoes, leaving the skin on. Spread a thin layer of coarse salt on a baking sheet, place the potatoes, cover with aluminum foil and bake at 180˚C for 50 minutes. If desired, place the head of garlic that will be used for the aioli to bake with the potatoes to optimize baking time. Remove the baking sheet from the oven, let it cool a little and break the potatoes with your hands into uneven and irregular pieces. Separate a container with kitchen paper. Heat about 2 fingers of oil in a frying pan over high heat. When the oil is very hot, carefully place the potato pieces in the pan. Let them brown on one side, then turn them over and brown on the other side. Do not move the potatoes, just stir to turn them over. Transfer the browned potatoes to the bowl with kitchen paper to absorb the oil, season with salt to taste while the potatoes are still hot and sprinkle with rosemary leaves to add fragrance. Aioli: Peel the skin off about 4 cloves of garlic that was roasted with the potatoes. Set aside. In a bowl, place 1 egg yolk and a little salt. Slowly add the olive oil, whisking constantly with a whisk until thickened. Add the garlic and lemon juice. Mix with the whisk, taste and adjust the seasoning, adding more garlic, salt or lemon if necessary. Store in the refrigerator until ready to serve.
