The “El Puente” and “El Mate” farms in Adelia María (province of Córdoba, Argentina) are two benchmarks of regenerative livestock farming in our province. “The idea is to produce healthy food without harming the environment,” says proudly Rina Vasquetto, one of the promoters of this production method. “It is a rational grazing system for the land. It is managed with occupation and rest times on different plots, looking for the optimal point of the pastures so that they are in condition to be grazed,” continues her husband Gabriel Ibáñez. The innovative thing is that the water is brought to the plots, the animals do not need to move to go in search of it, achieving that the urine and dung remain in the same place, which serves as fertilizer for the regeneration of the pastures: “It is a carbon capture system through the photosynthesis carried out by the plants. Atmospheric carbon is captured and incorporated into the soil, with that, we increase organic matter, we have more grass, more food and more production. It is a virtuous system.” Everything seems to fit together. Healthy soils, happy animals, increasing production, care for the environment and respect for people’s health. Under these kinds of processes, it is shown that production and care for the environment do not necessarily have to be antagonistic. This is where it all comes down.
