Also @CometeloCSTV E-mail: [email protected] Telephone: 951039100 INGREDIENTS – Soft nougat: – 300 g. ground almonds – 200 g. honey – 100 g. sugar – 1 egg white – 1 lemon – Ground cinnamon Marzipan: – 200 g. ground almonds – 200 g. icing sugar – 1 egg COOKING PROCESS – Put the honey and sugar in a saucepan over medium heat until well mixed. Remove from heat. – Beat the egg white until it forms stiff peaks and gradually add it to the honey and sugar. At first, lumps will form, which will disappear as we stir for 5 minutes. – Return the mixture to the heat and cook, stirring constantly, until it begins to change colour. Then add the zest of one lemon and half a teaspoon of ground cinnamon. Mix and add the ground almonds. When you have a homogeneous mixture, pour it into a mould lined with baking paper. Cover with more paper and place a mould on top with weight. Leave to rest for 5 to 6 hours. – For the marzipan, sift the ground almonds and mix them in a bowl with the icing sugar; also sifted. Separate the egg white and add it to the almond and sugar mixture. Mix patiently until you obtain a homogeneous mixture. Shape it as you wish, place it on a baking tray lined with baking paper, paint a little with the egg yolk and gratinate in the oven so that it takes on some colour.
