This works very well with a food processor or alternatively with a kitchen grater. For the dressing, squeeze an orange and half a lemon and pour the juice over the salad together with olive oil, salt and pepper. Mix everything well and leave to steep. In the meantime, chop the walnuts and caramelize them in a pan with a little coconut sugar until golden brown.
