About :

In Nammenam, we invite people we admire out into Norwegian nature to create culinary taste experiences. There is only one small catch: We take the food 100% seriously, but we give our guests the best. In this episode we make fish soup with Martin Lepperød and Jonis Josef! Follow Loff on Instagram and TikTok for more Nammenam ❤ RECIPE CRAB STUFF You need: Meat from one crab shell Grated peel from half a lemon Lemon juice from approx. half a lemon Olive oil, extra virgin A handful of finely chopped dill How to do it: Mix everything together in a bowl and season with salt and pepper RECIPE FOR FISH SOUP You need: Crab scales and claws Shrimp shells, if you have dry white wine, approx. 3 dl cream 3 dl h-milk 6 dl 1 fennel 1 leek 2 large carrots approx. 400 g white fish lemon cayenne pepper dairy butter approx. 100 g How to do it: Crush crab shells and claws with a hammer/rolling pin/pot. Take out a thick-bottomed pot. Fry the crushed crab and a couple of tablespoons of crab meat, together with half a coarsely chopped leek and half a coarsely chopped fennel, in neutral oil. Stir a little and saute until the leeks and fennel are glossy. Put in the wine. Reduce to porridge consistency. Pour in the cream and milk. Let it come to a small boil. Turn down the heat and let it just simmer. Meanwhile, cut up the other part of the leek. It should be the top, green part. Cut lengthwise into strips (a la julienne). Cut up the carrot in this way too. Same with the last half of the fennel. Add chopped leek, carrot and fennel to the soup. Stir in the butter. Season to taste with salt, pepper and lemon. Cut the fish into equal-sized pieces and add to the soup. Leave for approx. 10 minutes Stir in a large handful of dill, parsley and a teaspoon of cayenne pepper. Pour the soup into preheated, deep plates. Finish with a couple of swigs of olive oil and a small sprinkling of dill on top.
