RECIPE You need: 160 g tinned tuna in oil 1½ tbsp good quality mayonnaise 1 tbsp finely chopped pickled jalapeños 1 tbsp finely chopped fresh rosemary 1 tbsp jalapeño pickle juice from ½ lemon (organic) lemon zest from half a lemon (organic) 2–3 tbsp fruity and good olive oil salt and pepper How to do it: Pour the oil off the tuna and put it in a kitchen bowl. Finely chop the jalapeños and rosemary, and rinse the lemon well. Finely grate the yellow peel of the lemon on a grater, taking care not to get any of the white. Mix all the ingredients together with the tuna, and season with salt and pepper. Don't be afraid to try your hand at it. Add more lemon juice if you want more acid and freshness, or more rosemary if one tablespoon gives too little flavour. We will also clarify the importance of using a good and fruity olive oil! Choose one that adds flavor and character to the batter. No canola, sunflower or any other form of vegetable oil. It will NOT be the same. You MUST understand that. You are only fooling yourself by not using a really good olive oil – no one else. Finally, we remind you that you should preferably use organic lemon when using lemon peel, as there may be pesticides in the peel of ordinary lemons. Bon appétit!
