Enjoy watching! #quincejelly #jam #boiling #jelly For the quince jelly we need: 1 kg quinces 500 g gelling sugar 2:1 1 lemon Water Sieve Kitchen towel (muslin cloth) Hot boiled jam jars Large saucepan PS: If you don't want your jelly to be so solid, then use 900 ml juice for 1 kg quinces Rub the quinces with a kitchen towel to remove the felty fluff, then wash Remove the flower buds and stalks and cut the quinces, peel and core, into smaller pieces Put the quince pieces in a large saucepan and pour in enough water to just cover the quinces Bring everything to the boil and then simmer over a low heat for approx. 60 minutes When the quince pieces are soft, it's best to leave the pan overnight. This will turn the juice a lovely orange and the flavor will be much more intense Then it's best to line a sieve with a damp muslin cloth or tea towel and strain the juice. Do not squeeze the cloth or the jelly will become cloudy. Now pour 700 ml of the collected juice into a large saucepan, add the juice of one lemon and the gelling sugar. Mix well, bring everything to the boil and simmer for 4 minutes. Place a small plate in the freezer and after 4 minutes do a gelling test by putting a tablespoon of the jelly on the cooled plate. If it is firm enough, pour it into the prepared jam jars. If not, cook for a few minutes longer. Close tightly with the screw lid and leave to cool. As it cools, the hot contents contract and a vacuum is created. When you open it later, the lid will crack. You can also turn the filled jars upside down for a few minutes. This sterilizes the lids of the jars, kills any germs and makes the jelly last longer.
