Fry the minced meat in it over high heat for about 7 minutes. Meanwhile, peel the onion and garlic. Finely dice the onion, crush the garlic and chop finely. Add the onion, garlic and tomato paste to the minced meat and fry for about 3 minutes. Season with salt and pepper. Pour in the tomatoes. Simmer the sauce uncovered over medium heat for about 10 minutes, stirring occasionally. In the meantime, for the béchamel sauce, melt the butter in a pan. Sweat the flour in it over medium heat for about 2 minutes until light. Gradually pour in the cold milk, stirring constantly, and bring to the boil. Season with salt, pepper and nutmeg. Allow the sauce to simmer uncovered for around 10 minutes over a low heat, stirring occasionally. Season the minced meat and béchamel sauces with salt and pepper. Preheat the oven to 200°C fan. Spread some minced meat sauce on the bottom of a baking dish (35 x 20 cm). Place 3 lasagne sheets on top. First add ¼ of the remaining minced meat sauce, then ¼ of the béchamel sauce. Repeat the process three times with 3 lasagne sheets and sauces each, ending with a layer of minced meat and béchamel sauce. Cut the mozzarella into thin slices and finely grate the Parmesan. Spread the mozzarella slices on the lasagne and sprinkle the Parmesan on top.
