Fry everything together in hot frying oil for approx. 4 minutes. Add the freshly grated garlic and ginger and fry. Season the vegetables with wok spices and roast for approx. ½ minute. Then put them in a bowl together with the raw minced pork, season with seasoning salt, 1 tbsp soy sauce and seasoning and mix well. Then add the sake and mix well again. Spread the vegetable and minced meat filling on the gyoza dough sheets. Moisten the edges of the dough sheets with your fingers, fold them together in the middle, and then press the overlapping edges together with your fingers and seal them. Finally, finish the gyoza using the folding technique (see video). Heat the sesame oil in a pan, place the gyoza upright in the pan and fry the bottom side for approx. 1 min. Add a splash of water, cover the pan with a lid and cook until the water has evaporated. In the meantime, mix the rice vinegar, 4 tbsp soy sauce and mango-chili oil in a bowl to make a dip.
