Meanwhile, cut the carrot, celeriac and celery into walnut-sized pieces and add to the pan with the meat. Cut the onions into eighths and add to the pan as well. Add salt, mix well and fry everything together, stirring occasionally, for a further 10 minutes. Add the tomato paste to the meat and vegetables, mix and roast for approx. 5 minutes. Add the bay leaves and peppercorns to the sauce base and dust with flour. Mix everything well and roast for approx. 1 minute. Deglaze the sauce base with half of the red wine and reduce the liquid over high heat. Repeat the process with the other half of the red wine. As soon as the liquid has almost completely evaporated, fill the pan with 2.5 L of water. Bring everything to the boil and then simmer for 4-5 hours. After a good 2 hours, add 1 litre of water and continue to simmer. Remove the meat bones from the sauce and pass the sauce through a fine sieve.
