Place the tomato in boiling salted water for 10 seconds and then rinse in cold water. Then peel the skin off the tomato with a small knife. Quarter the tomato and remove the seeds. Cut the mozzarella into slices. Flatten the schnitzels on both sides with a meat mallet and season with seasoning salt. Place the mozzarella and tomato quarters alternately in the middle of a schnitzel, leaving space around it. Sprinkle the Caprese with basil leaves and Italian seasoning. Close the topped schnitzel with the untopped one and carefully pound the edge all around with the meat mallet. Turn the closed schnitzel on both sides first in flour, then in egg and finally in panko. Fry the breaded schnitzel in olive oil over medium heat for approx. 4 minutes on each side until crispy. Add butter to the schnitzel in the pan and continue to fry for about 1 minute. Drizzle the schnitzel in the pan with the melted butter every now and then and turn it over occasionally.
