Peel the celery, carrots and onions and cut into walnut-sized pieces. Remove the meat from the pan, add the remaining frying oil and fry the celery, carrots and onions in it. Pour 500 ml of water together with the vegetable stock into a saucepan and heat When the vegetables and onions are evenly roasted, add the butter, tomato paste, rosemary, thyme and bay leaves, stir everything together and fry. Then add the flour to the roasting mixture, stir everything together and fry briefly. Then deglaze with half the red wine and reduce until there is almost no liquid left. Add the remaining red wine to the pan and reduce again. Pour in the hot stock and season with meat spices. Add the meat back to the sauce and bring everything to the boil. Cover the pan with a lid and cook the meat in the hot oven for about 3 ¼ hours. Remove the pan from the oven. Remove the roast from the sauce, cut against the grain into slices about 1 cm thick and arrange on a plate. Pour some sauce over it.
