She mixes the flour with the eggs, then rolls out a thin sheet of pasta. In a bowl she combines the pumpkin pulp, the crumbled amaretti and the grated cheese, seasoning with salt, pepper and nutmeg. She mixes everything well and transfers the mixture into a piping bag. She distributes some walnuts of filling along the sheet of pasta and then closes it on itself. Using a pastry wheel, she makes some filled squares and closes them into tortelli. She cooks in boiling salted water, drains and sautés in a pan with butter and sage. Serve sprinkled with pepper. Ingredients for the dough: 400 g of 00 flour 4 eggs For the filling: 500 g of pumpkin pulp 50 g of amaretti biscuits 100 g of grated cheese Salt and pepper Nutmeg For seasoning: Butter Sage
