Ingredients: 2 kg orange pumpkin, 200 g polenta flour, 30 g sugar, 17 g salt, oregano, 200 g Manitoba flour, 110 g water, 10 g extra virgin olive oil, 6 g fine salt Procedure: Let's prepare the dough: in a planetary mixer, or in a bowl, we put the flour, the extra virgin olive oil, the water at room temperature and the salt. We work with the hook, or our hands, until we obtain a smooth and homogeneous dough. Wrap in cling film and let it rest for half an hour. For the filling, we grind the raw pumpkin (already cleaned and peeled) with the classic mincer. We put the minced pumpkin in a bowl and add the polenta flour, sugar and salt. Mix everything together. Roll out the shortcrust pastry with a rolling pin to obtain a thin disk. Place it on a well-oiled tart pan, so as to cover the base and edges. Spread the pumpkin filling on the pastry and level it. Fold the excess pastry over the filling and sprinkle with oregano. Drizzle with oil on the surface and bake in a hot, static oven at 180° for 45 minutes.
