Have fun with it! _________________ HOW TO DO IT Whisk fresh eggs in a blender and pour thinly (approx. 3-5mm) onto clean baking sheets. Dry the egg mixture completely at 70°C, preferably overnight, but for at least 5 hours. The egg is ready when it flakes off the tray like granules when dry. Grind finely in a spice mill and dry again at 70°C - for at least 5 hours, preferably overnight. Allow the powder to cool and pour into a clean swing-top jar. STORAGE Store in a cool, dark place, protected from moisture. SHELF LIFE With meticulous hygiene and optimal storage conditions, the powder will last for at least 3 months. USE Mix water to egg powder in a ratio of 3:1, allow to rehydrate briefly and use like a normal whisked egg. One egg corresponds to approx. 12 g of whole egg powder and 36 g of water. IMPORTANT: only consume when fully cooked, not raw, do not use for smoothies or shakes.
