Preparing New Year's dinner is more than just cooking: it's a celebration of moments full of love and meaning!✨ In this video, I start the day picking flowers with my mother, to decorate our table and home. 💐 Afterwards, I prepare a special supper: roast sirloin marinated with fresh herbs from the garden, lentils for prosperity, rice, short ribs and a melon cream finished with a delicate red fruit syrup. 🍒 All the recipes are below. 👇🏼 Nature still excelled on the last day of the year: we had rain, sun and a bit of hail. I hope these moments bring you lightness and calm... 🥰 #new year #newyear recipes #supper #newyearsupper #easy recipes #easy recipes #DIY #lentil #tenderloin #redfruits #natural broth ROASTED LOIN RECIPE: (serves 8 people) Ingredients: 1.5 kg of loin Herbs fresh and dried 1 lemon 1 clove of garlic 1 cup white wine Olive oil Salt Vegetables of choice for the roast (I used a head of garlic, small potatoes, raw tomatoes, bay leaves and rosemary) Preparation method: Dry the loin and make small holes so the seasonings adhere well. Make the seasoning mix: I used fresh rosemary, thyme and sage, a clove of garlic, broth from 1 lemon, dehydrated herbs, salt and olive oil. Chop the herbs well, mix with the olive oil and lemon and rub all over the loin. Wrap the loin in plastic wrap and leave to marinate for at least 5 hours in the refrigerator. Remove from the fridge 10 minutes beforehand and seal the entire tenderloin in a very hot pan with a drizzle of oil. In the same pan, still hot, add 1 cup of white wine and 1 cup of water to deglaze. Transfer this liquid to the mold. Place the loin in a pan with the chosen vegetables, water the vegetables with the liquid from the pan and bake for approximately 45 minutes at 180 degrees. Transfer the ingredients from the pan to a platter (only reserve the liquid if you want to make the roux) ROUX SAUCE: Ingredients: 2 tablespoons of wheat flour 2 tablespoons of butter Preparation: Dissolve the wheat with the butter, stirring well to avoid lumps. Add the liquid from the pan, stir until it thickens and pour over the loin. LENTIL RECIPE (serves 8 people) Ingredients: 750g of lentils 1 onion 200g bacon in cubes 3 liters of natural broth Bay leaves 500g of smoked ribs Method of preparation: Sauté the onion and bacon in cubes Add the lentils and natural broth in the sequence Place the ribs and bay leaves. After boiling, cook for approximately 30 minutes. Salt and pepper to taste. RECIPE NATURAL BROTH (for lentils or other recipes) Ingredients: ½ leek 1 onion 2 bay leaves 2 cloves of garlic Cloves 1 carrot Salt and pepper Method of preparation: Cut the onion into 4 parts and stick the bay leaves into them with the help from carnations. Cut the carrot into thick slices. Cut the leek into 3 or 4 parts. Add all ingredients to a pan with approximately 3 liters of water. After boiling, cook for about 1 hour. MELON CREAM (OR MOUSSE) RECIPE: Ingredients: 1 very sweet melon 2 natural yogurts 1 cream 4 tablespoons of sugar 1 unflavored gelatin Method of preparation: Dissolve the gelatin according to the label specifications. Cut the melon into cubes. Blend all the ingredients in a blender, transfer to a container (or individual pots) and refrigerate for at least 3 hours. RECIPE RED FRUIT SYRUP: 2 cups of frozen red fruits (I used blackberries and strawberries) Half a cup of fresh fruits (I used cherries and blueberries) Broth of 1 lemon 1 cup of sugar Half a cup of brown sugar Water Method of preparation: Add the fruits frozen, lemon broth and sugar in the pan, with a little water (about half a cup). Stir over low heat until almost all of the fruit has dissolved.
