Gradually pour in the remaining water, waiting for it to be absorbed before adding more. Increase the speed. With the last part of the water, also add the salt and increase the speed. After two minutes, pour in the oil slowly, little by little. Continue kneading at speed 3 or 4 for another 5 minutes or until the dough is smooth and comes away from the bowl. Move the dough onto the work surface, fold it over, and place it in an oiled container. After an hour of resting at room temperature, transfer it to the refrigerator for about 18 hours. The next day, with the dough still cold, divide it into 4 loaves of 270 g. Make them 210/230 for clamshell ovens. Place the loaves in a proofing box or in individual oiled containers. Let them rise at room temperature until they have almost doubled in size. It will depend on the temperature in your home: 4 to 7 hours. Roll out the loaves on the semolina, then place them on the surface and season them.
