Fresh garlic - 5g Technology: Cut lean pork into pieces under a meat grinder, freeze in the freezer for 40 minutes. Grind the frozen meat on a 4-5mm grid, add all the salt, sugar, garlic and spices and knead the mince well for 3-5 minutes, cover and put in the refrigerator for 12-24 hours. Using a sausage or culinary syringe, squeeze the sticky mince into 15-20 mm thick sausages onto parchment paper so that they do not touch. Drying: You can dry in a dehydrator at a temperature of 35-40C for up to 24 hours. In my version - in the oven. Turn on the lower heating element and convection (do ONLY WITH CONVECTION!!!), with the oven door slightly open and at a temperature of 45-50C, dry for 3 hours. Then turn the sausages over and dry for another 3 hours. After drying, let them lie at room temperature for another 1-1.5 hours. After drying by 50-55% of the initial weight, the product is ready for use! Storage: In the refrigerator in a bag - 15-20 days. In the refrigerator in parchment - 3 months.
