It would be a shame to throw them away. Discover our ways to use pickled beets after draining the juice. 1. Pickled beetroot soup: Chop the beets. Cook the broth or use homemade bouillon cubes. Simply add the beets to the broth. You can whiten the soup with cream and add a bit of horseradish to the plate. It tastes delicious :-) 2. Beetroot in a salad with olive or oil dressing. Prepare the sauce according to the recipe. Mix the chopped beets with cooked beans / chickpeas / lentils / feta cheese. Mix with the sauce and sprinkle with your favorite greens. 3. Beetroot in a salad with yogurt sauce. Prepare the sauce: mix mayonnaise with yogurt (3 parts mayonnaise and two parts yogurt), add finely chopped onion and a little sugar. You can acidify the sauce with apple cider vinegar. Chop the beets and mix them with hard-boiled eggs. Season with salt and pepper. Mix with the sauce. Sprinkle with your favorite greens.
