Ragusano is one of the oldest cheeses born in Sicily, originally from Syracuse, it then spread throughout the island, conquering everyone's palates. It has a delicate and not very spicy flavour so it can be replaced with parmesan or a semi-hard caciotta that can be grated. In this case we chose spaghetti that brilliantly welcomes the sauce but it is such a versatile condiment that it also goes well with short pasta and even with gnocchi!
