A light but powerful flavor dessert, exquisite to share with family or friends. After a good dinner or lunch, this dessert will delight your guests, it is a delicacy of the Gods. INGREDIENTS: FOR THE BASE: 200 gr. vanilla cookies 150 gr. butter (7 heaping tablespoons) FOR THE FILLING: 450 gr. firm cream cheese 400 ml. heavy cream 250 gr. passion fruit pulp with or without seeds 400 gr. condensed milk 20 gr. unflavored neutral gelatin 100 ml. water = 6 tablespoons FOR THE COVERING: 300 gr. passion fruit pulp with seeds 150 ml. water = 9 tablespoons 75 gr. of sugar = 6 tablespoons 1 85gr passion fruit flavoured gelatin 1 22cm diameter mould with a removable bottom; line the walls with greaseproof paper. Procedure: Process the cookies. Add the melted butter. Form the base in a 22cm springform pan or ring, refrigerate while you prepare the filling. Hydrate the gelatin in the water. Boil the passion fruit pulp and add the hydrated gelatin, beat well to dissolve the gelatin. In a bowl, beat the cream cheese at room temperature, the condensed milk and the cream, beat very well until it is medium-point, a little thick. Add the passion fruit pulp with the hydrated gelatin. Mix everything very well. Pour the filling over the base. Place in the freezer for 1 hour and then place in the refrigerator for 1 hour. For the topping: Place the water with the gelatin and sugar in a pot, beat well until the sugar and gelatin dissolve and bring to a boil. When it begins to boil, remove from the heat and add the passion fruit pulp and continue beating a little so that it mixes well and cools. Place on the cheesecake and freeze until the gelatin takes shape. When the gelatin has hardened, refrigerate and serve when you like.
