Passatelli with fish sauce, the frozen one for making risotto... Very good and cheap. With this amount of passatelli you get a lot. Keep in mind that I made half with fish sauce and half with broth. So you can divide the doses of passatelli in half  for the passatelli: 500 g of finely grated bread 500 g of grated parmesan cheese 80 g of flour 11/12 whole eggs Two teaspoons of nutmeg Salt pepper Grated lemon zest For the fish sauce with the frozen preparation 1 kg of fish, the one we find in supermarkets in frozen form, the risotto preparation 6/7 anchovies, those in jars Two hot peppers Four cloves of garlic Chopped parsley, both leaves and stems A can of datterini tomatoes Oil salt Lemon peel, finely chopped with a knife Cooking the passatelli when you put them down, wait for them to float and let them boil for 2/3 minutes… however it is always good to taste
