What better, light, tasty dish than my tasty escarole? My stewed escarole is very versatile, so if you don't want or don't prefer all the ingredients I use, you can easily avoid some. Before starting, I remind you that escarole is also known as ENDIVE and that there are 2 varieties, one with smooth leaves and one with wavy leaves (commonly called curly escarole which has a more sour flavor). Ingredients for 4 people 600-700 gr. of escarole 20-25 black olives 7-8 capers 3-4 anchovies in oil 1/4 medium onion Extra virgin olive oil to taste Salt to taste Ground chili pepper (optional) Clean the escarole by removing the first outer leaves if damaged, cut the core at the base and wash the leaves thoroughly. Remove excess water and if there are leaves that are too large, cut them further. Finely chop the onion, chop the anchovies and chop the capers. Add 4-5 tablespoons of oil to a large pan or pot, put on medium heat, add the onion, capers and anchovies, brown for a few minutes and then add the leaves while still wet. Let it flavour for a few minutes always on a low heat, stirring occasionally and then add 2-3 cups of water and cover with the lid and cook for 15-20 minutes always on a low heat. If you want to eat the escarole as a single dish, then I recommend leaving it more soupy and perhaps accompanying it with some croutons, while if you prefer a side dish of escarole, then I would recommend letting it dry a little more!
