Fair onion meat in a burger • 1.8 kg pork neck • 2 kg vegetable onions, chopped • 4 tbsp brown sugar • 4 cloves of garlic, finely diced • 100 ml apple cider vinegar • 300 ml dry red wine • 4 tbsp Southwest Cajun (Ankerkraut) • 1 tsp sweet paprika powder • 1 tsp smoked paprika powder • 1 tsp salt (mix Southwest Cajun, sweet paprika powder, smoked paprika powder & salt together) Preparation, see video! Mayo-mustard-chili sauce • 150 g mayo 50% fat • 30 g mustard, hot • 25 g honey • 20 g red mini peppers in chili • 1 tsp baruner sugar • 2 tsp Worcestershire sauce • 2 tsp parsley, chopped • ½ tsp black pepper To top the burger • Danish gherkins in slices • Leaf lettuce, or salad (iceberg, lettuce hearts, Lollo Rosso, Lollo Bianco) • Brioche burger buns Based on a recipe from BBQ Pit (Thorsten Brandenburg) https://bbqpit.de/die-perfekten-hambu...
