The piece is traditionally made from loin, specifically from the roast beef of the high Beirid and, as they say in Germany, from the high loin cut from the rear quarter of the cow. There is the classic Viennese onion roast beef with braised onions and mustard in the sauce which is poured over with red wine and brown jus and gently simmered and then served with crispy fried onions, fried potatoes and bacon beans on top. There is also the Swabian version with braised onions, brown gravy and spaetzle or cheese spaetzle. As well as the onion roast beef, the Esterhaszy, Znaimer, Paprika, Jäger or vanilla roast beef are firmly anchored in Austrian cuisine.
