Recipe: Fried sardines with tomato, cherry and basil rice Sardines: 30 units - sardines 1 l - water 150 g - traditional sea salt 3 dl - white wine vinegar qb peanut oil qb wheat flour Rice: 0.5 dl - extra virgin olive oil 80 g - bacon 150 g - chopped onion 4 sliced garlic cloves 300 g - peeled red pepper, diced 1 dl - white wine 2 dl - tomato juice 200 g - peeled tomato 1.8 l - broth chicken 500 g - carolino rice 250 g - cherries in pitted halves qb traditional sea salt qb pepper 10 leaves - basil Rice: Brown the bacon, onion, garlic and peeled pepper in olive oil. Pour with white wine, bring to a boil and add the tomatoes and tomato juice. Cover and cook for about 3 minutes. Add the vegetable broth and when it boils, add the rice and season with a little salt. Let the rice cook with the pan covered. When it is at the end of cooking, add the pitted cherries, basil leaves and adjust the seasoning. Sardines: Remove the head and intestines from the sardines and place in a little water with ice, salt, vinegar and a little olive oil. Let the sardines rest for 45 minutes.
