Recipe: Hake colored with pea cream, ginger and mint Hake: 1.8 kg – hake fillet as much wheat flour as paprika as much fleur de sel as extra virgin olive oil Pea cream: 250 g - frozen peas 4 cloves chopped garlic 80 g - chopped leek 2 dl - fish stock 0.5 dl - white wine 20 g - blanched mint 10 g - chopped ginger 50 g - chopped bacon qb extra virgin olive oil qb sea salt qb freshly ground pepper To serve: qb paprika powder qb mint 2 units - degummed lemon Using a hand blender, emulsify the olive oil, garlic, lemon juice, salt and pepper. Pour over the fish fillets and marinate for 5 minutes. Mix the wheat flour with a little paprika, bread the fish fillets and fry them in a frying pan with a little olive oil. Sauté with olive oil, bacon, ginger, leek and garlic. Add the mint, peas and soak with the white wine and fish broth. When it boils, place it in a blender or food processor and blend. Adjust the seasonings. Serve the fillets over the pea cream.
