For the puree, wash the potatoes and cook in a little salted water. 2. Wash the nettles and blanch in boiling salted water. 3. As soon as the nettles are cooked, strain, squeeze and puree 4. Peel the potatoes and press them through a press, bring the milk to the boil with the butter. 5. Mix the potatoes, nettles and milk until creamy. 6. Halve the tomatoes, press in the garlic and fry in olive oil. 7. Melt the butter with the sage in the pan, fry the fish in it until it is translucent. 8. We have been friends for over 30 years, know each other pretty well and share many private passions: we love to eat, we love to cook and I love being in the garden.
