It is certainly more substantial, but I want to give you a variation to make it faster and work less, replacing the classic sponge cake with Savoiardi biscuits, which have nothing of the Neapolitan and I hope that my Neapolitan friends will forgive me in favor of a simpler and quicker recipe to make. Ingredients A 230g rectangular puff pastry Savoiardi biscuits or sponge cake to taste 500ml vegetable whipping cream Strega liqueur, or alchermes or rum A glass Sour cherries in syrup (optional) Cream Milk 500ml Flour 45g Vanilla flavouring to taste 3 tablespoons sugar Lemon or orange zest Use a rectangular puff pastry from the supermarket, fold it in half, mark the half and cut it in half already on the baking paper in the baking tray. In the meantime, you have already turned the oven on to 180°-190°c. Use a fork to fill the pastry with holes so that it does not rise in the oven. Lightly wet the puff pastry with water using a brush, sprinkle it with granulated sugar, and bake for 15 minutes. It should be golden, almost, and I repeat, almost biscuit-like. Prepare the custard. In a saucepan, put 3 whole eggs, sugar and flour and mix with a whisk until the flour is free of lumps, add the milk, vanilla flavouring and a grating of lemon peel. Bring to the stove and mix continuously until it boils where this mixture will become an excellent cream, remove from the stove and continue mixing for a minute. Then let it cool covered, you can prepare the cream even the day before. Whip the vegetable cream that does not need to be sweetened. In a bowl mix a glass of liqueur with a spoonful of water, as a non-alcoholic soak you can instead use orange juice always diluted a little. Mix the cream with the cold custard. Now you have all the ingredients ready. On the bottom of a serving dish put a spoonful of cream and spread it and place one of the two biscuits of puff pastry on top, with the sugared part facing upwards. Make a generous layer of cream on the biscuit, slightly wet the ladyfingers and cover the entire rectangle covered with cream, then make another layer of cream on the biscuits, break about ten cherries in syrup and make another layer of biscuits, more cream and then the remaining biscuit with the sugar facing down. With a spatula close all the spaces left on the perimeter of the cake. Clean the plate with paper. Put in the fridge for at least 2 hours. Remove from the fridge and use a sawn knife to make squares from the cake all cut equally, into squares of 4-5 cm on each side, sprinkle with powdered sugar. And tell me it's not a good cake.
