Buffalo mozzarella is a delicacy and for many connoisseurs it is the symbol of Bella Italia. But few know that the creamy cheese dream hides a dark secret. The animal welfare organization “Four Paws” revealed that water buffalo on farms in Campania - THE buffalo mozzarella region in Italy - suffer and are not kept in a species-appropriate manner. That is why Ariane Alter tries to make mozzarella herself - without animal suffering. Ari decides on a vegan recipe and a variant made from organic cow's milk. In the end, Ari tries to convince a critical taste tester with her homemade mozzarella varieties. You can see whether the homemade mozzarella can keep up with the buffalo mozzarella from Campania in terms of taste in the new PULS report. ANIMAL SUFFERING ON BUFFALO FARMS IN ITALY The video material shown in the report is from 2014 from the animal welfare organization Four Paws. According to its own information, Four Paws has randomly examined 16 of around 2,000 buffalo farms in Italy. Four Paws found abuses on all 16 farms and documented some of them with a hidden camera. The sample does not allow the conclusion that all water buffalo on Italian farms suffer. On the other hand, there is no organic or animal welfare label for Italian buffalo mozzarella that guarantees that the animals are kept in a species-appropriate manner. In further smaller samples in 2018 and 2019, the animal welfare organization found individual improvements in husbandry. However, the fundamental problems still existed. HOMEMADE VEGAN AND ORGANIC COW'S MILK MOZZARELLA The good news first: To make mozzarella yourself, you only need a few ingredients. The bad news: Timing really matters, especially with the cow's milk variant!
