On the third day of our tour of Scotland, we have arrived in Dysert, on the east coast of Scotland, on the outskirts of Kirkcaldy. In its heyday in the 16th - 17th centuries, the port of Dysert was an important trade center. Ships loaded with salt and coal traveled to many countries, including the Baltics, but the small port town was called "Saltsburg" and "Little Holland". Today, Dysert is much quieter, visitors are delighted by the ancient buildings, but only a few fishing boats go out to sea from the picturesque harbor. As suggested by the locals, in order to really taste the goodies of the North Sea, as well as other Scottish delicacies, we should go to the nearby Kirkcaldy Farmers' Market. That is why, following the advice, we will start today's program with a visit to the market. We will taste the delicacies offered by home producers, and also visit the fair's most famous man, Ian R. Spink, whose smoked fish has been praised by many of Britain's best chefs. In the second part of the program, we will already smoke ourselves, but we will pair the treat prepared in Mārtiņš's kitchen with Raimond's story about whiskeys.
