Chia-emmer-spelt wholemeal bread from SchapfenMühle Preparation time: 20 minutes plus resting and baking time Servings: 2 loaves Ingredients: Pre-dough: 100 g SchapfenMühle wholemeal emmer flour 60 g SchapfenMühle emmer flakes 50 g SchapfenMühle sunflower seeds 40 g SchapfenMühle chia seeds 2 g sugar 2 g salt 2 g fresh yeast 250 g water, lukewarm Dough: 200 g SchapfenMühle wholemeal emmer flour 120 g SchapfenMühle wholemeal spelt flour 20 g SchapfenMühle rye sourdough 12 g salt 9 g yeast, fresh 175 g water, lukewarm Put the ingredients for the pre-dough in the mixing bowl and mix for 1 minute/level 2.5 to form a homogeneous mass, then cover and leave to rise in a cool place overnight. Add the ingredients for the dough to the pre-dough one after the other and knead for 10 minutes/dough kneading level. Place the dough on a floured work surface, cover and leave to rise at room temperature for 20 minutes. Then fold all four sides together towards the middle and leave to rest, covered, for another 20 minutes. Then divide into two equal-sized pieces and shape into rounds. This is how rounding works: Using both hands, fold the dough from the outside to the inside, twisting the dough and tightening the surface. Pull the dough downwards and push it lightly under the dough to create a smooth surface. Put two pieces together in a loaf pan, cut lengthways and cover and leave to rest in a warm place for 60 minutes. Preheat the oven to 250°C top/bottom heat, place an ovenproof bowl with water on the bottom of the oven and bake the dough on the second lowest rack for 5 minutes. Then reduce the temperature to 200°C and continue baking for 45–60 minutes. And? Did you do as well? We want to see it.
