The Moselle region is one of the most beautiful wine regions in our country. The cuisine in the wine bars is legendary. Sylvia and Doro have done this honor with their book "Winzerküche". Today there is something from this book for you on MIXX-TV. Sylvia is showing you the Winzer-Rösti today, which you can make super easily with your Thermomix®. The highlight of this Rösti is that it is fried from a puree-like mass and then baked again with hearty Emmental cheese and fine streaky bacon. A real treat, try it out! Winzier-Rösti Preparation time: 60 minutes Servings: 4 Ingredients: 500 g water Salt & pepper 750 g waxy potatoes 2 onions, peeled, halved 25 g + 8 tbsp butter 1 egg (size M) 8 slices of streaky bacon 4 slices of Emmental cheese Pour the water and a pinch of salt into the mixing bowl. Put the potatoes in the steaming basket, put them in the mixing bowl and cook for 25 minutes/ 120°C/ level 1. Then drain them and leave to cool overnight. The next day, peel the skin and roughly dice the potatoes. Put the onions in the mixing bowl and chop for 5 seconds/ level 5. Use the spatula to push the rest off the edge. Add 25 g butter and sauté for 4 minutes/ 120°C/ level 1 until translucent. Press the potato pieces through a spaetzle press and put them in the mixing bowl with the egg. Then mix for 20 seconds/level 3, season with salt and pepper. Put a tablespoon of butter in the pan and add ¼ of the potato mixture, shape into a rösti and press together well with a spatula. Fry on one side at a low heat until golden brown. Then turn out onto a plate, put 1 tablespoon of butter in the pan and fry the rösti on the other side until golden brown, pressing together with a spatula every now and then. Do the same with the remaining mixture and form 3 more rösti. Preheat the oven to 200°C grill function. Line the baking tray with baking paper and place the rösti on it one after the other. Place the streaky bacon on the rösti, cover with the Emmental cheese slices and bake in the oven for approx. 5 minutes until the cheese melts. And? Did you do as well? We want to see that.
