Put water and dashi kombu in a pot and leave for about 2 hours if possible. 2. Add bonito flakes and bring to a boil slowly over medium heat. Once it boils, reduce heat to low and simmer for about 5 minutes. Place a paper towel in a colander and squeeze out the excess water. ■Kombu and Bonito Plum Furikake [Ingredients] Dashi kombu and bonito flakes after making the stock, 2 umeboshi plums, appropriate amount of white sesame seeds A (2 tbsp sake, 2 tbsp soy sauce, 1 tbsp sugar) [Directions] 1. Cut the kombu used to make the stock into thin strips and finely chop the bonito flakes. 2. Stir-fry in a frying pan, add A and the pounded umeboshi plums, and stir-fry over low heat until the seasoning is gone. Turn off the heat and mix in the white sesame seeds. ■Wakame and Tofu Miso Soup (serves 3-4) [Ingredients] 30g wakame, 1/2 a spring onion, 1/3 a block of firm tofu, 600cc dashi, 3 tbsp miso, a little powdered sansho pepper B (1 tsp mirin, 1 tsp soy sauce) [Directions] 1. Soak the wakame in water and cut into 3cm widths. Chop the spring onion into small pieces. ② Put the stock in a pot and heat it. Once it boils, turn the heat to low and dissolve the miso in it. Add B, cut the tofu into 1cm cubes on your hands and add them to the pot. Heat until the tofu is warm. ③ Add the wakame seaweed, spring onion, and powdered sansho (1 pinch) to a bowl and pour in the miso soup just before serving. ■Rice balls (serves 3-4) Ingredients: 600g rice, appropriate amount of nori seaweed, a little salt Directions: ① Wet your hands with salt water with a salt concentration of about 1%, put a little salt on your fingertips and rub it into your palms. ② Add your favorite ingredients to the rice, gently roll it to enclose it, and wrap it in nori seaweed if you like.
