Millet is not only delicious, but also very nutritious. So there are at least two very good reasons to bake a large, juicy loaf of bread with it. Recipe: Cook 100 g of millet with water and a little salt according to the manufacturer's instructions and leave to cool to lukewarm. Mix 600 g of lukewarm water with 10 g of yeast and 10 g of apple sauce. Mix 250 g of wholegrain rice flour, 150 g of millet flour, 50 g of buckwheat flour, 30 g of ground psyllium husks, 20 g of ground linseed and 10 g of salt with the cooked millet and add to the yeast mixture. Knead vigorously. Put the dough in a floured clay pot and leave to rise for 30 minutes. Meanwhile, preheat the oven to 230°C top/bottom heat. Bake for 60 minutes on the bottom shelf. Remove the lid and bake for a further 10 minutes without the lid. Turn out of the tin and allow to cool before cutting.
