INGREDIENTS for 2 portions 250 g wheat flour, type 405 200 g quark, 20% fat 150 ml milk lukewarm 120 g Gouda grated 100 g sour cream 100 g bacon, streaky, smoked finely diced 40 g butter liquid 10 g yeast, fresh 3 pinches white pepper 3 eggs, size M 1 pinch salt 1 tsp wheat flour, type 405 1 tsp durum wheat semolina 1 onion finely diced 0.50 tsp salt Dissolve the yeast in lukewarm milk while stirring. Add the flour, salt, egg and butter and knead into a smooth dough. Leave the dough to rise at room temperature until the dough has doubled in volume. Preheat the baking stone in the oven. Settings: Oven (preheat baking stone) Operating mode: Top/bottom heat Temperature: 250 °C Booster: On Preheat: Off Level: 1 For the topping, mix together the quark, sour cream, eggs and cheese and season with salt and pepper. Halve the dough. Roll out one half on a floured surface to form a round plate (30 cm in diameter). Place the sheet of dough on the wooden peel sprinkled with semolina. Roll up a 1 cm wide edge of dough all around towards the middle. Spread half of the quark and sour cream mixture on the dough sheet. Sprinkle half of the bacon and diced onion on the cheese mixture. Slide immediately onto the baking stone and bake until golden brown.
