We add orange or lemon zest, grating only the outer peel. Add a cup of oil or ghee and continue beating with a hand or electric mixer. It is possible to beat all the ingredients in a blender for five minutes until the mixture is well mixed, then add the flour gradually, one cup after another, while continuing to beat. Add the third cup. We put the bag of baking powder and mix it well with the flour, then Stir the mixture with a wooden spoon, then add the fourth cup with a light pinch of salt and stir the mixture, then add the fifth cup of flour and knead the dough with your fingers without kneading until a dough of consistent consistency is formed and comes out of the bowl easily without sticking. We take a third of the dough and roll it up and put it in a stretch bag and put it in the freezer for half an hour or an hour. We prepare a 28*24 tray and grease it well with ghee or oil and put the remaining two-thirds of the dough in it and spread it evenly in the tray, then put it in the refrigerator on the shelf until the third of the dough in the freezer is up for half an hour. After half an hour, we take the tray out of the refrigerator and take a third of the dough out of the freezer. We spread the jam with the back of the spoon on the face of the dough spread in the tray and try not to get the jam to the edges. Then we sprinkle coconut on the face of the jam. Coconut is optional, meaning if it is not available, it does not matter. Then we cut a third of the dough wrapped in the bag into four or three pieces and start grating the dough pieces with a tomato grater on the face of the filling and distribute the grating evenly. Put the tray in the oven at 180 degrees, medium. Place the tray on the middle rack for 25 minutes until the sides turn red. Then turn on the grill for five minutes until the top turns red. Take it out and leave the grated cheese to cool completely. Then cut it with a sharp knife. It can be cut into squares or sambucas as desired. Serve it with pleasure and good health. 🌹🌹🌹🌹🌹🌹🌹 O God, bless and grant peace and blessings upon our master Muhammad and his family and companions.
