Ingredients gathered from all over the southern provinces are mixed into the chicken, and when the chicken is taken out of the young chicken stew and the broth remains, dumpling skins are made with croaker, beef, and bamboo shoots and boiled. This food is born from ingredients gathered from Mokpo, Damyang, Naju, and other places around Gwangju. The harmony on the table is not only the ingredients but also the cooking process. Through the young chicken stew, fish dumplings, meat dumplings, and bamboo shoot dumplings with the skills of Choi Yeong-ja, an intangible cultural asset, we discover the characteristics of Gwangju food in Jeollanam-do. ■ Taste and style found in the city of Yehyang An old tea house in downtown Gwangju. As expected from a city of Yehyang, even ordinary tea houses have sumi-e paintings hanging. There, I met Oh Sook-ja, a Gwangju native who got married after nine years of love. In the house of an elderly couple in their seventies, 'Moon River' flows from an old record. Oh Sook-ja's fingertips, which preserve the romance of the city, have the unique taste of food from her family that has lived as a Gwangju native for generations. She used to serve ring kimchi, which was not easy to taste because it contained various ingredients such as meat and seafood, only to the adults, and she made bu-gak when seaweed from Wando Mountain rose. She dreamed of becoming a travel writer, and even now, in her seventies, she remembers and learns about Gwangju's food and prepares meals. ■ Why did delicacies from the mountains and seas gather in Gwangju? Gwangju is a city that is geographically surrounded by Mudeungsan Mountain to the east, gentle mountains in the vicinity, and the Yeongsan River flows and wide plains spread out around it. Originally, the centers of Jeolla-do were Jeonju and Naju. However, in the late 19th century, when the provincial government of Jeollanam-do was established in Gwangju and it became the administrative center, Gwangju went beyond being a mere functional center and became a center where the spirits of the people of the southern region gathered. Yeongsan River also provided an environment where products from Honam gathered. Gwangju was located at the center of the Yeongsan River, including Naju, Damyang, Jangseong, and Hwasun. Various products from the southern region gathered along the stream filled Gwangju’s tables. We will see the diverse food of Gwangju prepared with seafood from the southwestern coast and ingredients easily obtained from the fields. ■ Fertile plains, enriching the table In the late Joseon Dynasty, Gwangju was an agricultural society with 47 reservoirs centered around Gyeongyang Dam. Grains produced in the Naju Plain became ingredients for fermented foods, and various rice dishes were created. Examples include bukkumi, which can be tasted at Min Bak-soon’s house, and dansul, a beverage made by fermenting rice with beans and malt powder. Also, sesame seed paste, which is pickled and eaten in the spring before the sun sets and the kimchi is made, is a Jeolla-do specialty seasoned with soybean paste and dried fish broth.
