You can make them with vegetables, mushrooms or Florentine style, but the most famous are undoubtedly the meat ones. But not brick-like meat, the meat must be nice and soft, a ragù that wants to escape from every hole in the cannelloni and mix with the cheese, the béchamel. But it can't escape... Ingredients A baking dish for 6 people Mixed coarse minced meat 700 g 1 celery carrot onion Oil salt pepper to taste White wine a glass Tomato puree 2 glasses Bay leaves 2 leaves Béchamel 700 ml Hot milk 70 g butter 70 g flour Salt, nutmeg Lasagna pasta 8 sheets or 12 cylinders for cannelloni Grated Parmesan 150 g For meat cannelloni, ragù is generally used or if there are leftovers of cooked meat, making the meatball mixture. They are certainly much better with ragù, but a lot, and you need a generous, coarse and dry ragù. While if you use cooked meat you will have a denser filling like a brick, like a meatball, with more garlic, spices and bread or ricotta. Today I'm making the ones with ragù, so come on, put a pot on the stove right away and let's go. Two turns of oil in the pot and the coarsely chopped vegetables. Brown and add the meat which can be pork and beef or even sausage. Brown the meat which must be coarsely chopped. Moisten with the wine and let it evaporate for a couple of minutes. Add the sauce and a cup of water, salt and pepper, two bay leaves and cook over medium heat for 30 minutes with the lid on and then remove the lid and cook another 30 minutes until the ragù is very dry, without sauce, all meat. Taste for salt. In the meantime, prepare the béchamel. In a pot, heat 700 ml of lightly salted milk, in another pot, brown the butter and flour, add the hot milk and mix well until the béchamel thickens. If you don't want lumps, remember that both the butter and flour and the milk must be hot. Season the béchamel with nutmeg and a generous handful of parmesan cheese if desired. Prepare the lasagna pasta. If you want to make it at home and cook it in rectangles, that's fine, but I recommend using the ready-made vacuum-packed fresh lasagna pasta that you can find at the supermarket, or make crepes that you can roll up later, or buy the dry cannelloni to fill, although I must say I'm not crazy about them. I use the ready-made fresh lasagna pasta, I boil it for less than a minute and put it in cold water, and then I spread it out on 2 dry, clean cloths or, once cold, I layer it on a baking sheet, lightly greasing it. It is advisable to cook only 2 at a time and, as soon as they are in cold water, move them delicately with your hands to prevent them from sticking. The ragù is ready, the béchamel is ready, the sheets are ready and the cheese is ready. In a baking dish, put two ladles of béchamel. On the side of the pasta put 2-3 tablespoons of dry meat and a good dose of cheese, and roll it up tightly like a cigarette, creating the cannelloni. Make a nice row of cannelloni and fill the baking dish, Cover everything with the remaining béchamel and on top put the remaining meat if there is any left otherwise nothing. A nice sprinkling of cheese and put in the oven. 30 minutes at 180°C. And put in the middle of the table.
