In these days of Emergency it is important not to go out every day to go to the supermarket! You can do a weekly shop, buying lots of fresh vegetables and make a meal prep, preserving them in the best way. Some tips 1- Always put the label with the following information: content, date, number of portions 2- If you store hot foods, always use glass containers 3- All preparations can be stored in the freezer for a maximum of 2-3 months. 4- All preparations, with the exception of the raw mix for minestrone, can be stored in the fridge for a maximum of 4 days. Creamed soup - 6 portions 1.5kg vegetables in total (potatoes, fennel, carrots, leek, Jerusalem artichoke) 2 litres of water (approximately) 2 tablespoons of oil 10g of salt Tips: avoid overcooking the vegetables, as soon as they are soft you can blend them. Wait for the creamed soup to cool before closing the containers. Thawing: pass the container under running water to detach the vegetable cream. Place it in a pan directly frozen and bring to the boil. Serve with a drizzle of oil, some croutons or pasta or rice. Minestrone - 6 portions 1.8 kg of vegetables (potato, fennel, carrots, courgettes, Jerusalem artichokes, leek) 200g peeled red lentils Cooking: Place the still frozen minestrone in a pan, cover with water or broth, add a pinch of salt, a drizzle of oil and leave to simmer gently for about 20-30 minutes. You can enrich the minestrone by adding bread, pasta, cereals or other legumes. Leafy vegetables - 6 portions 3 kg Field vegetables Tips: avoid overcooking the leafy vegetables. Turn them often in the pan and as soon as they are soft, remove them from the heat. Defrosting: heat the frozen vegetables directly in a pan or put the container in the fridge and let them defrost for a few hours. You can use the vegetables to prepare side dishes, fillings, savory pies etc. Curry mix - 4 portions 300g mushrooms 50g leek 900g vegetables (potatoes, fennel, courgette, carrots) Tips: before adding the coconut milk, the vegetables, if they are frozen, must be heated well in a pan. You can also use these vegetables for other dishes, such as risottos, pasta, side dishes etc. Defrosting: Put the still frozen vegetables in a pan, add a drizzle of oil and cover with a lid, let the vegetables become soft again and use them as desired. Artichoke Pesto 6 servings 4 artichokes 1 clove of garlic 1 sprig of marjoram Salt & Oil 150g cooked cannellini beans 70g dried fruit 2 tablespoons of lemon juice 2 tablespoons of oil Water if necessary Tips: you can use this cream to season pasta or stuff piadinas. Thawing: let the cream thaw in the fridge for a few hours, or put it in the microwave on low power for a few minutes.
