This is how you cook Marcus's (Lotta Lundgren's) main dish: - If you haven't decided to break up or get a divorce, I think you should gather all the finest feelings you can find within yourself and cook lasagna for someone extra good tonight. Personally, I usually make an open lasagna with almond pesto and ricotta. Actually, exactly everyone likes it. Start by roasting a handful of almonds in a dry frying pan and then crush them in a grinder or mortar. Melt a centimeter-thick slice of butter in a saucepan, let bubble over medium heat, a couple of minutes or so until the butter darkens a few shades and begins to smell crackly. In with the crushed almond and finely grated zest from an unsprayed lemon - that is, only the outermost yellow peel where the lemon oil sits, not the bitter white inside. Season with a drizzle of honey, a few drops of lemon juice and a pinch of salt. That was almond pesto. Finely chop a large yellow onion and a couple of cloves of garlic. When we talk about cooking with love, we are referring, among other things, to the chopping itself. The most loving thing is to chop the onion once and then chop the chop until it becomes something you can sprinkle with your fingertips. Fry this in butter. Add lots of finely sliced mushrooms, preferably the kind you've picked yourself in a state of personal crisis; chanterelles, Karl-Johan or regular button mushrooms and portabella. If you eat meat, shred 5-6 slices of Parma ham and fry with the mushrooms until crispy. When the mushroom has some surface area at the edges, add a bag of fresh leaf spinach and fry until the spinach has collapsed. Season with freshly ground black pepper and salt. Keep warm. Heat two plates in the microwave, that's pretty much the only thing you can have an extra microwave on, so be careful if you happen to have one. Bring well-salted water to a boil in a large saucepan. Boil two fresh lasagna plates until soft, scoop them up with a slotted spoon and put them on the hot plates. Now spread the mushroom filling over half the lasagna sheet, top with a dollop of ricotta, spread over the rest of the pasta to cover the filling, spoon over warm almond pesto and serve.
