MEASUREMENTS IN GRAMS . 200 g of peeled and roasted peanuts (unsalted) . 20 g of sunflower oil . 30 g of egg white . 150 g of sugar . 30 g of water . 30 g of honey . 7 g of bitter cocoa (optional) MEASUREMENTS IN CUPS . 1 ⅔ cup of peeled and roasted peanuts (unsalted) . 2 tbsp of sunflower oil . 1 egg white . ¾ cup of sugar . 2 tbsp of water . 1 ½ tbsp of honey . 1 tbsp bittersweet cocoa (optional) PREPARATION 1- Place the peeled peanuts in the food processor and process until completely crushed. 2- Add the oil in a thin stream and continue processing until you get a creamy paste and set aside. 3- Place the sugar, water and honey in a saucepan and bring to a boil without stirring. 4- Place the egg white in a bowl and beat until stiff. Begin beating the egg white when the syrup begins to boil. 5- The syrup will be ready when it reaches 118° C. If you want a turrón with a crunchier texture, you can bring the syrup to 125° C. (This would be the point before it becomes caramel). 6- Pour the mixture in a thin stream over the egg white, beating constantly. Beat until you can touch the bowl with your hands and it does not burn. 7- Add the peanut butter to this mixture and incorporate with a spatula. 8- Then add the bitter cocoa and mix achieving a marbled effect. 9- Cover a mold with plastic wrap and distribute evenly and press. 10- Refrigerate for a minimum of three hours before consuming. 11- Store in an airtight container at room temperature in a cool place or refrigerated if the weather is warm for a maximum of one month. ????
